Sowaryu Honzen
Honzen ryori cuisine, which originated in the Muromachi Period (1336 - 1573), is a form of Japanese cuisine. More specifically, Sowaryu Honzen was started as one branch, or one form, of Honzen cuisine. It was the favorite of Sowa Kanamori, the founder of Sowaryu tea ceremony and the eldest son of Arishige Kanamori, the second lord of Takayama clan.
Sowaryu Honzen cuisine is based on the spirit of tea ceremony. Therefore, there are many rules of selecting materials and seasoning and for arranging the foods on the dishes. Susaki restaurant has observed these traditional rules since 1794, late in the Edo period, and has maintained these rules orally for over 200 years.
However, our philosophy is not to keep observing all the rules but to change some of them to match the needs of the modern society. One example of these changes is Honzen Kuzushi, which we designed to make it possible to taste Sowaryu Honzen in a shorter time, by selecting eleven dishes from the original thirty dishes.
A Traditional Japanese Cuisine Style in Hida
The spirit of Sowagonomi, or the style that Sowa Kanamori himself favored, is expressed in everything you can see, hear and touch; the dry garden called Karesansui of which each room has its own view, the furniture and the crafts are our major attractions. Our only wish is to satisfy all guests from the moment they first enter our ryotei restaurant to the moment they last leave it. We show the Sowagonomi spirit of hospitality, through our efforts to make our guests feel at ease.
